Summer 2024 Food & Wine Workshop
August 25-September 1, 2024
Summer's workshop is devoted to tomatoes and the sea. Jarred at their peak freshness, good tomatoes are the soul of a traditional Southern Italian ragù. We'll learn the traditional processes of preserving tomatoes and the secrets of the best tomato sauces.
The most special visits of the summer workshop will be to Cetara on the Amalfi Coast and a Pisciotta to learn about anchovy fishing and preserving in the traditional methods. We'll also see how colatura, a condiment similar to Roman garum, is made in traditional barrels.
To beat the heat we'll head to the mountains to visit the cantina of Azienda Agricola Boccella for a wine tasting and a homemade lunch with the winemakers themselves.
This workshop includes a free day to relax at Borgo La Pietraia, or an optional visit to Beach Club 93.
